A little insight into the opening night of Carsten Höllers new restaurant, one that will follow a radically different approach to contemporary cooking. By adhering to the thirteen principles of Höller’s ‘Brutalist Kitchen Manifesto,’ the purity and ethics of the food hold a central position, without excessive embellishments of sauces and spices – hence the reference to brutalism. The shift from aesthetics to culinary essence marks the creation of a whole new art form on its own.
